veggie-coconut pot

as the weather is getting colder here in Newcastle I have been cooking more and more hot pots which are soooo yummy – fill-the-belly food.

on the weekend, we went to Bingara for my cousins beautiful wedding. we were lucky enough to pick up some home-grown, grass fed fresh lamb. and by ‘some’ I mean enough to feed a small army! so I am cooking this yummy pot with fresh sausages. delish! it is a bit of a ‘mix all your leftover veggies together’ meal!



  • 1 x large brocoli tree
  • 1 x bunch of bok choy
  • 2 x zucchini
  • 3 x garlic cloves
  • 1 x red onion
  • 6 x diced sausages
  • 2 x diced tomato cans
  • 1 x punnet of mushrooms
  • 1 x can of coconut milk
  • 1 x baby broccoli bunch
  • 1 x tablespoon soy sauce
  • 1 x tablespoon fish sauce
  • 1 x capsicum


  1. heat the pan and add olive oil, onion and garlic.
  2. add all other vegetables and sauces. place the lid on your saucepan and allow to cook on halfway heat for about 40 mins.
  3. while this is cooking, add your sausages on high heat in the frypan and cook.
  4. add the cooked sausages to the mix and continue cooking all together for another 10 mins.
  5. enjoy!
