as the weather is getting colder here in Newcastle I have been cooking more and more hot pots which are soooo yummy – fill-the-belly food.
on the weekend, we went to Bingara for my cousins beautiful wedding. we were lucky enough to pick up some home-grown, grass fed fresh lamb. and by ‘some’ I mean enough to feed a small army! so I am cooking this yummy pot with fresh sausages. delish! it is a bit of a ‘mix all your leftover veggies together’ meal!
ingredients
- 1 x large brocoli tree
- 1 x bunch of bok choy
- 2 x zucchini
- 3 x garlic cloves
- 1 x red onion
- 6 x diced sausages
- 2 x diced tomato cans
- 1 x punnet of mushrooms
- 1 x can of coconut milk
- 1 x baby broccoli bunch
- 1 x tablespoon soy sauce
- 1 x tablespoon fish sauce
- 1 x capsicum
how:
- heat the pan and add olive oil, onion and garlic.
- add all other vegetables and sauces. place the lid on your saucepan and allow to cook on halfway heat for about 40 mins.
- while this is cooking, add your sausages on high heat in the frypan and cook.
- add the cooked sausages to the mix and continue cooking all together for another 10 mins.
