I am in a terrible habit of not eating breakfast, so this morning I woke up with a burst of inspiration and went to the shops to buy some yummy ingredients – on a budget!
this is a fast and simple meal. I made a big batch so I can put it in the fridge for tomorrow!
- 4 large tomatoes
- 1/2 red onion
- 80g feta
- tablespoon of olive oil (I used a garlic infused oil that was a gift from my sis as she knows my obsession with the flavour)
- salt and pepper as desired
- sourdough loaf
- dice the tomato, onion and feta, place into a large mixing bowl and add oil, salt and pepper.
- top a slice of sourdough with the ingredients and off you go!
