Feta Bruschetta


I am in a terrible habit of not eating breakfast, so this morning I woke up with a burst of inspiration and went to the shops to buy some yummy ingredients – on a budget!

this is a fast and simple meal. I made a big batch so I can put it in the fridge for tomorrow!


  • 4 large tomatoes
  • 1/2 red onion
  • 80g feta
  • tablespoon of olive oil (I used a garlic infused oil that was a gift from my sis as she knows my obsession with the flavour)
  • salt and pepper as desired
  • sourdough loaf


  1. dice the tomato, onion and feta, place into a large mixing bowl and add oil, salt and pepper.
  2. top a slice of sourdough with the ingredients and off you go!
