A meal to feed a small army
Ingredients
- 1 1/2 cups of water
- 1 1/2 cups of brown rice
- 2 x chicken thigh fillets
- 4 tablespoons of soy sauce
- 3 tablespoons of fish sauce
- 1 teaspoon of smashed garlic
- 1 tablespoon of coconut oil
- 6 stalks of kale
- 1/2 medium packet of spinach
- 1 x bunch of brocolini, chopped longways into pieces approx 4cm long
- 2 x large carrots, diced
- 1 x red onion
- 1 x cup of chick peas
- 1 x cup of kidney beans
- 1 x cup of diced tomato
- 2 x cups of diced mushroom
How
- Before cooking, dice the chicken in to pieces approx 2cm in width and length. Add coconut oil to pan and wait until hot. Add chicken and 1 tablespoon of soy sauce, leave to cook for 10 minutes, stirring regularly.
- Bring 1 1/2 cups of water to the boil and add 1 1/2 cups of rice, allowing to cook fir also 10 minutes.
- Add brocolini and carrot, and let it cook for another 5 minutes.
- Add chicken to the rice, followed by fish sauce, soy sauce and garlic. leave to cook for 3 minutes
- Add kale, spinach, tomato, red onion, mushroom and bring the pan back to a simmering temperature. Leave simmering for about 20 minutes or until kale and spinach has softened. add a large pinch of salt and pepper to serve.
