Fresh spring rolls with ‘The chilli garlic dressing’


  • 2 bunches of vermicelli
  • Packet of rice paper
  • 1 carrot
  • 10 snow peas
  • 2 handfuls of spinach mix
  • Handful of mushrooms
  • 1/2 red onion
  • 3 shallot storks
  • 1/2 capsicum
  • 1 tomato
  • Coconut milk
  • Soy sauce
  • 3 chicken fillets
  • ‘Chilli garlic dressing’ see recipe below.


  1. Cook the mushroom in coconut milk and 1 teaspoon of soy sauce. With the leftover sauce, cook mushrooms.
  2. Boil water in a large bowl and dip one of the rice paper in until pliable. Fill with veggies, chicken and vermicelli. Roll like a wrap: sideways, top, bottom, sideways.
  3. Repeat step 2 until you have made the amount you want.
  4. Serve with a small amount of the sweet chilli sauce and use as a dip.
