Ingredients:
- 2 bunches of vermicelli
- Packet of rice paper
- 1 carrot
- 10 snow peas
- 2 handfuls of spinach mix
- Handful of mushrooms
- 1/2 red onion
- 3 shallot storks
- 1/2 capsicum
- 1 tomato
- Coconut milk
- Soy sauce
- 3 chicken fillets
- ‘Chilli garlic dressing’ see recipe below.
How:
- Cook the mushroom in coconut milk and 1 teaspoon of soy sauce. With the leftover sauce, cook mushrooms.
- Boil water in a large bowl and dip one of the rice paper in until pliable. Fill with veggies, chicken and vermicelli. Roll like a wrap: sideways, top, bottom, sideways.
- Repeat step 2 until you have made the amount you want.
- Serve with a small amount of the sweet chilli sauce and use as a dip.
