- 2 x potato, washed with skin left on
- A pinch of salt and pepper
- A pinch of Italian herbs
- Teaspoon of olive oil
- Cut the potato into small rectangular piece and drizzle some oil on top. Use a brush to spread the oil and create a light cover over them.
- Sprinkle with herbs, salt and pepper
- Leave in the oven for 15-20 minutes or until chips are crispy.
- Serve with your fave sauce or dip.
