Barbecued chicken breast with a bean and zoodle salad


  • 3 chicken breast fillets
  • 2 tbs soy sauce
  • 2 zucchini
  • 1/2 cup of coconut cream
  • Pinch of nutmeg
  • Pinch of Italian herbs
  • 7 cherry tomatoes
  • 1 cup of basil
  • 5 big leaves of mint
  • 5 leaves of dill
  • 12 beans, chipped in thirds
  • 3 cups of spinach leaves
  • 3 cups of kale
  • 5 garlic pieces
  • Tsp of fish sauce


  1. Put the coconut cream and a teaspoon of olive oil in a pan and leave to heat.
  2. Spiralise 2 large zucchini and put in the pan on middle heat. Mix with some salt and pepper and leave covered for 5 minutes.
  3. Add mint, dill, nutmeg, Italian herbs, garlic, fish sauce, soy sauce, beans, spinach and kale and leave to simmer for 15 minutes.
  4. Rub the chicken in a small amount of soy sauce and cook on the barbecue with some olive oil. Top with salt and pepper.
  5. Serve and add pine nuts.
