Lunch 13-01-18


A quick, healthy lunch: zoodles cooked in home-made hummus with mushrooms, salad and sirloin steak.


  • 2 x zucchini
  • handful of mushrooms
  • 1/2 chilli finely chopped
  • 5 cherry tomatoes
  • handful of spinach leaves
  • 1/2 capsicum, finely chopped
  • 1 sirloin steak
  • a few pine nuts
  • 1/4 red inion
  • small amount of parsley
  • 1/2 handful of basil
  • 1 cup hummus
  • 1/4 cup of water


  1. put water and hummus into a frypan with a teaspoon of olive oil and allow to eat for 2 minutes. Once heated put the mushrooms and zoodles in and place a cover over the pan. once the zoodles are soft, removed from the heat and put into a bowl. If there is extra liquid, use a pair of tongs so this stays behind.
  2. The rest is easy: place all salad and herb ingredients (add extra if you like) into a large bowl and give it a good mix. add a dash of olive oil, salt and pepper and place into the fridge for 15 minutes, or while you cook the steak.
  3. using the same frypan with leftover liquid, put the heat on high and allow to heat for another 2 minutes. Put the steak in and cook to how you would usually like. once ready, chop into pieces
  4. Add the zoodles and steak to salad, add pine nuts, a pinch of salt and pepper.
